Reinventing a Family Favorite Meal

Chili has always been a popular meal. You’ll see it on the “Best Comfort Foods” list. Coming home to a bowl of Chili on a cold winter day is comforting! It even makes you think of the Wild West, being out on the trail eating your chili over the campfire as the stars twinkle above.

The most common chili is made with lean ground beef, onions, and kidney beans in a tomato sauce. Why not change it around a bit by adding mushrooms and crushed pineapple – a sort of sweet and sour taste. You can exchange the ground beef for lean ground turkey or perhaps some lean steak. Plus you could add some black beans to the kidney or just exchange them for it and throw in some frozen corn niblets.
Another trendy form of chili is to used roasted red peppers, roasted squash and mushrooms, black beans, carmelized onions and of course garlic.  
Serve with cornbread, whole wheat buns or focacia bread and a salad and you will have a great healthy dinner.
